How to Make Paleo Granola

  • 2 Cups Flaked coconut medium
  • 1 Cup Almonds
  • 1 Cup Walnuts
  • 1 Cup Pecans
  • 1 Cup Sunflower seeds
  • 1 Cup Pumpkin seeds
  • 1 Cup Hazelnuts
  • 1 Cup Raisins or dried cranberries
  • ½ Cups Coconut oil or butter
  • 1 Teaspoon Salt
  • 4 Tablespoons Cinnamon
  • ½ Teaspoons Nutmeg
  • ½ Teaspoons Cardamom
  • 2 Teaspoons Vanilla
  • 4 Tablespoons Maple Syrup
  • Instructions

    Step 1

    Combine all the nuts and seeds in a large bowl. Cover with water and add a pinch of salt. Cover with a cloth and soak overnight 8-12 hours. If you want to soak longer, change water daily (3 days)

    Step 2

    Drain and rinse with fresh water

    Step 3

    Preheat oven to 325. Combine coconut with the rinsed and drained nuts.

    Step 4

    Pulse in a food processor in 3 batches until it resembles oats.

    Step 5

    Pour into a bowl

    Step 6

    In your original bowl or another bowl, combine spices, oil, salt, vanilla and maple syrup.

    Step 7

    Mix the spices and oil and sweetener. The. Pour the but mixture into this and combine well.

    Step 8

    Pour out the granola onto two parchment lined cookie sheets and pat down so that they have a chance to stick during the baking.

    Step 9

    Bake at 325 for about 40 minutes, rotating the trays halfway through.

    Step 10

    Remove from oven when they are golden and dry to the touch. Break into chunks and mix with the fried fruit.
