Melt butter and lay one phyllo sheet on a cutting board. Brush with butter then cover with another phyllo sheet. Repeat until there are 4 layers.

Place Brie rounds on phyllo dough (2 per rectangle work best), drizzle with honey, top with about 2tsp pistachios.
Cut rectangle in half leaving one Brie round per side. Gather the edges and pull up over the Brie, slightly twisting into a bundle. Pinch the top to seal...it will look messy, don't worry.
Bake according to the phyllo package instructions. Serve immediately. Can be eaten alone, with bread, or with crackers.
