Wash and peel 6-7 large apples. (I used 7 so that I could have extras for something additional at the end!)
In a medium bowl, combine flour, sugar, and cinnamon - set aside.
Dice your apples into fairly small and evenly sized pieces and place in a large bowl.
Add the cinnamon mixture to the apples and stir until well combined - set aside. (At this time you will want to preheat your oven to 400* F and spray your muffin pans with Pam)
Unroll your chilled dough and use a circle cookie cutter or the rim of a large Mason jar to cut the bottom crusts. I was able to cut 7 circles out of each 9" crust. Don't throw away your scrap crust!
Place each circle of crust into the greased pan - place in fridge to stay cold until you're ready to fill. Use scrap crust to cut out a cute top for your pies! I made heart shapes for mine.
Fill your crusts with the apple mixture and place a few small pieces of butter on top of apples for extra flavor!
Top your pies with a top crust if desired, and spray a light coat of Pam or brush with melted butter and sprinkle with sugar.
(Optional) - here's where I used up my extra apples! Slightly larger pies in ramekins.
Bake in 400* oven for 15-18 minutes or until just golden brown. When done, remove pans from oven and let cool on racks for 10 minutes before removing pies from pans.
After 10 minutes of cooling, run a knife around each pie, carefully remove, and place on rack to cool completely.
Enjoy your mini apple pies! You can also use this recipe to make berry pies, just make sure to add cornstarch to your berries as a thickener so that the juices don't overflow while baking! :)
