Select mangos with smooth green skin and no blemishes.
Thinly peel, conserving as much of the fruit as possible.
Slice some white onions.
A few sprigs of cilantro.
Standing the mango on the stem end, slice down to cutting board.
Remove all the fruit from the seed.
Add jalapeño, with seeds, or without, to taste.
In food processor, combine all the ingredients. A blender can also be used but a food processor gives a better texture.
Add salt to taste. Cover & refrigerate for flavors to blend. Add more cilantro, onion, and jalapeño if needed. This can be made days in advance and will not darken like avocado goo.gl/wRi61C
