How to Make Lemon Slice

  • Slice Base:
  • 80 Grams Butter
  • ¾ Cups Sweetened condensed milk
  • 250 Grams Nice biscuits (Arnott's brand)
  • 1 Cup Desiccated coconut
  • 1 Lemon
  • The zest of a lemon
  • 1 Tablespoon Fresh lemon juice
  • Lemon icing:
  • 1 ¾ Cups Icing sugar
  • 2 Tablespoons Fresh lemon juice
  • 3 Pinches Desiccated coconut (for sprinkling over slice)
  • Instructions

    Step 1

    lay out all the ingredients.

    Step 2

    Grease a 18cm by 28cm baking pan.

    Step 3

    Place butter and condensed milk in a small saucepan over medium-low heat, stirring occasionally. Remove from heat when butter is melted and mixture is smooth.

    Step 4

    Finely crush the biscuits using a blender or food processor.

    Step 5

    Stir coconut, crushed biscuits and lemon zest in a large bowl until well combined.

    Step 6

    Juice the lemon.

    Step 7

    Stir the lemon juice into the condensed milk mixture.

    Step 8

    Add the wet ingredients to the dry ingredients.

    Step 9

    Stir until well combined.

    Step 10

    Press the mixture into the prepared baking pan. The back of a spoon or the base of a glass can be used to help press the mixture down firmly and smoothly.

    Step 11

    Put in the refrigerator while preparing the icing.

    Step 12

    Combine icing sugar and lemon juice in a small saucepan over low heat. Stir until mixture is warm to the touch and completely smooth. Remove from heat and use immediately.

    Step 13

    Spread lemon icing over the slice and sprinkle with extra coconut.

    Step 14

    Refrigerate until cold and firm.

    Remove the baking pan from the fridge and cut into pieces.
