Preheat oven to 400F
Spray a muffin tin with Pam or line with muffin cups
In a large bowl combine lemon zest and sugar.
Mix together with your fingers to bring out the zest
Add flour , salt, baking powder and baking soda and set aside
In a small bowl combine eggs, yogurt, butter, and vanilla
Mix until fully combined
Add wet ingredients to dry and fold together. Make sure not to over mix
add poppy seeds and fold again
Scoop into muffin cups. I got 9 muffins out of the batter.
Bake for 18-20 min
