How to Make Leek and Potato Soup

This is one of my favorite soups I prefer to mash the potatoes instead of blending it so that you can get the wonderful texture of the leeks in the soup.


  • 5 Leeks
  • 2 Potatoes
  • 1 Pinch Salt to taste
  • 4 Cups Vegetable or chicken broth
  • 3 Garlic cloves
  • 1 ½ Cups Onion
  • 3 Tablespoons Butter
  • 1 Pinch White pepper (Optional)
  • ½ Cups Milk for Color
  • 1 Teaspoon Chopped chives
  • Instructions

    Step 1

    You can make this recipe into a potato and leek soup by swapping the potato and leek proportions.

    Step 2

    Now gather your ingredients. Roughly chop the onions, slice the garlic, half the leeks length way and slice, peal the potatoes and quarter length way then chop.

    Step 3

    Put a large pot on medium to low het, melt the butter in the pot then add the onions, garlic, salt and white pepper then cook for 4-5 minuets or until soft. stir occasionally.

    Step 4

    Mix in the leeks.

    Step 5

    Cover for 8 minutes. stir occasionally.

    Step 6

    Once the leeks are tender add the broth, potatoes and milk (optional) Then simmer for 20 minutes or until the potatoes are cooked.

    It should look a little like this.

    Now mash the potatoes while there still in the pot or you can run it through a blender however this will purée your soup.

    Step 9

    Serve garnished with chopped chives and enjoy!
