How to Make Jumbo Berry Muffins

These jumbo muffins can be thrown together in a matter of minutes, make your house smell amazing, and taste like they're right out of a bakery!

Supplies

  • 1 Tbsp vinegar
  • 1 cup milk
  • 2 tsp vanilla
  • 3 Tbsp veggie or coconut oil
  • 2 cups flour
  • 1/2 tsp plus 1/8 tsp salt
  • 2 tsp baking powder
  • 1/2 cup plus 2 Tbsp sugar
  • 1 cup fresh or frozen berries
  • Jumbo 6 count muffin tin
  • Instructions

    Step 1

    Preheat oven to 350*. Combine first 4 ingredients in a medium bowl and set aside.

    Step 2

    In a large bowl, combine remaining ingredients (except berries) and stir until well blended.

    Step 3

    Pour wet ingredients into dry and stir until JUST combined - don't over mix!

    Step 4

    Add berries (I had frozen mixed berries on hand) and stir until just incorporated.

    Step 5

    Pour into lined jumbo muffin tin, sprinkle tops with sugar, and bake for 30-40 minutes or until golden brown.

    Step 6

    Remove from oven and let cool in pans (about 20 minutes) and move to cooling racks.
