Get all your ingredients ready
Slice 2 of the onions
Dice the other 2 onions along with the red pepper, celery, and 2 cloves of garlic
Sprinkle 2 of the 3 tablespoons of Cajun seasoning over your chicken
Put 2 tablespoons of oil in a pan and brown the chicken on all sides
Set the chicken aside
Put the sliced onions in the pan and they will gather up all the left over seasoning. Cook for 5 minutes and then set aside.
Put the remaining tablespoon of oil in the pan and cook the chorizo for 3-4 mins until starting to change colour.
Now add the 2 diced onions, red pepper, celery and garlic and cook for 5 minutes
Add the sliced onions from earlier
Then the chicken
Then the remaining tablespoon of cajun seasoning, rice and water
Add a tight fitting lid and simmer for 20 minutes (don't lift the lid during this time). If the rice is still hard after 20 mins add 200ml more water and leave for a further 10 minutes.
When it is ready it will look like this. Garnish with spring onions and enjoy!
