How to Make Italian Meringue

Supplies

  • 150 Grams Caster sugar
  • 50 Milliliters Water
  • 2 Egg whites
  • Instructions

    Step 1

    Scale sugar

    Step 2

    Add water

    Step 3

    Get eggs

    Step 4

    Take their whites

    Step 5

    Start whisking

    Step 6

    Bring sugar to 121c hard ball stage

    Step 7

    Pour onto your whites when they are at soft peak stage

    Step 8

    And whisk like a mad man

    Step 9

    Keep going

    Step 10

    Until you have lovely peaks:)
