How to Make Iced Pumpkin Cookies

Supplies

  • 2 ½ Flour
  • 1 Teaspoon Baking powder
  • 1 Teaspoon Baking soda
  • ½ Teaspoons Salt
  • 1 ½ Cups White granulated sugar
  • 2 Cups Powdered sugar
  • ½ Cups Butter, softened plus 1 tbsp for the frosting
  • 1 Egg
  • 1 Cup Canned pumpkin
  • 2 Teaspoons Cinnamon
  • ½ Teaspoons Nutmeg
  • 2 Teaspoons Vanilla extract, 1 tsp for icing
  • ½ Teaspoons Cloves
  • Milk, whole or 2%

    First preheat the oven to 350 F. Then get your mixer dusted off and ready to do its thing. ;)

    First add the flour to a bowl.

    Then add the baking powder, baking soda, salt, nutmeg, cinnamon, and cloves. Set aside.

    Now you need to get your butter softened if you haven't already, so I just microwave it for 5-10 seconds at a time, turning the stick every time until, by touch, it feels softer but not melty.

    Perfectly done. Took about 12 seconds with a flip over at 8-9 sec. Microwaves vary though.

    Now take that butter and plop it into the mixer. ;)

    Add the granulated sugar to the butter, start up your mixer, and mix away until smooth.

    Add the canned pumpkin.

    Then add the egg. I have chickens, so our eggs are organic. This egg happens to have a greenish blue shell! Cool huh ;)

    Add the vanilla, turn on your mixer again, and mix the rest in! ;)

    Now add your dry ingredients into the mixer and mix away until it looks like soft dough.

    Get out your cookie sheet and line it with parchment paper, or you could use a silicon liner for non stick magic! ;)

    Drop spoonfuls of sticky dollups of dough down on the tray, spacing them about an inch or two apart.

    Put the tray of dough dollops in the oven and set your timer for 15-20 minutes. The aroma from the oven will drive you crazy! :)

    While you wait on the first batch, it's time to make the icing.

    Pour your powdered sugar into a bowl.

    Then melt the 1 tbsp of butter in the microwave for about 30 seconds.

    Add the melted butter and 1 tsp of vanilla extract to the powdered sugar. Then add 3 tbsp milk and mix it all up.

    Ahhh yes!!! This batch is ready for the cooling rack ;)

    Put another cookie sheet under the cooling rack to catch the extra icing when it drips down over the cookies. ;)

    Drizzle the frosting onto each cookie and wait for it to set. Then it's going to be time to eat them!!! Yumm!
