by Matt N

Fresh homemade tomato pasta sauce.

  • 6 Tomatoes
  • 1 Onion
  • ¼ Red pepper
  • ¼ Green pepper
  • 3 Cloves of garlic
  • 1 Tinned tomato
  • 1 Tomato passata
  • 150 Milliliters Red wine
  • 2 Tablespoons Olive oil
  • ½ Bunches Fresh basil
  • 1 Tablespoon Dried basil
  • 1 Tablespoon Oregano
  • 1 Pinch Salt and pepper
  • Instructions

    Step 1

    Step 2

Add the olive oil and heat on medium heat.

    Step 3

Dice the onion and mince the garlic.

    Step 4

Dice the red and green pepper.

    Step 5

Gently fry the onions and garlic on a low to medium heat for a few minutes.

    Step 6

Add the peppers and continue to fry on a low to medium heat.

    Step 7

While the onions, garlic and peppers are slowing cooking, put the tomatoes in a large bowl and fill with boiling water.

    Step 8

Leave for a few minutes until the skins start to break. They will be much easier to peel.

    Step 9

Add some red wine to the pan and gently simmer 10 minutes or until most of the liquid has gone.

    Step 10

Keep simmering the onions until most of the liquid has gone, like this.

    Step 11

Peel the tomatoes, because they were resting in boiling water, the skins should come off really easily.

    Step 12

    Roughly dice the peeled tomatoes.

    Step 13

    Add to the onions.

    Step 14

Add the can of tinned tomatoes.

    Step 15

    Add the tomato passata.

    Step 16

Lastly add 1 1/2 teaspoons of sugar, I prefer sugar cubes.

    Step 17

Mix up well and bring to the boil.

    Step 18

Simmer for 45 mins - 1hr. The longer the better.

    Step 19

Add the chopped up fresh basil, the oregano and the dried basil.

    Step 20

Taste for seasoning. Add salt and pepper accordingly. Simmer for 1 hour or more. The longer the tastier.

    Step 21

You can hand blend at this point for a smoother sauce. I like mine slightly chunky. Serve on your favourite pasta and enjoy!
