These cookies are a delicious "Oreo" type filled chocolate sandwich cookie. This recipe is from "Martha Stewart's Cookies" cookbook. I highly recommend it for the cookie lovers out there!

Note: These cookies are a lot easier to make if you have a stand mixer. The dough is very stiff. I'm using a hand mixer and it was a bit more difficult but not impossible.

Preheat your oven to 375 degrees and line your baking sheet with parchment paper. If you do not have parchment paper you can use a silpat mat or just be sure to grease your baking sheet.

Tip: if you are using a hand mixer beat the butter slightly and add your sugar in thirds. Otherwise your sugar will fly everywhere when you turn your mixer on.

Next we press the cookies! You will need a small bowl of sugar, a glass with a wide flat bottom, and a spray bottle filled with water (optional).

Tip: Be very consistent with the size of your cookies. When you press them try to make them all the same size since you will be matching them up to make sandwiches later.

Put in your 375 degree oven for 10-12 minutes turning once about halfway through.
