How to Make Hearty Vegetable Soup

  • 2 Chopped Onions
  • 2 Crushed Garlic cloves
  • 3 Chopped Zucchini
  • 3 Peeled and a chopped carrots
  • 3 Chopped celery stalks
  • 400 Grams Diced tomatoes
  • 1 Liter Chicken stock
  • ¼ Cups Chopped basil leaves
  • 500 Grams Chopped Pumpkin
  • 1 Head of broccoli chopped small
  • ½ Chopped cauliflower
  • (Optional) Parmesan cheese
  • Instructions

    Step 1

    Start by chopping and peeling all of your ingredients. (Try and cut all vegetables to a similar size)

    Step 2

    Heat oil in a saucepan over medium to high heat.

    Step 3

    Add onion and garlic and stir for 3 to 5 minutes.

    Step 4

    Add remaining vegetables and stir for 5 minutes or until vegetables start to brown.

    Step 5

    Add tomato

    Step 6

    Add stock

    Step 7

    Bring to the boil. Reduce heat to low and simmer for 20 minutes or until vegetables are just tender.

    Step 8

    Add pasta, season with salt and pepper.

    Step 9

    Add basil and serve.

    Step 10

    Enjoy. Serving tip: You may add some shaved Parmesan for added flavour
