How to Make Healthy Lentil&sweet Potato Curry (Vegan)

Healthy and winter-warming curry 💚

Supplies

  • 1 Sweet potato (medium size)
  • 1 Cup Green lentils (cooked)
  • 1 Teaspoon Tomato pure
  • ⅓ Cups Coconut milk
  • 1 Tablespoon Coriander paste
  • 2 Tablespoons Fresh coriander
  • 1 Tablespoon Ginger
  • 1 Tablespoon Red chili pepper
  • 2 Garlic cloves
  • Coconut oil (for frying)
  • Instructions

    Step 1

    Ingredients: cooked lentils, sweet potato, ginger, garlic cloves, red chili pepper, coconut milk, coriander paste, tomato pure, fresh coriander

    Step 2

    Tools: chopping board, knife, spatula, tablespoon, broiler

    Step 3

    Chop all veg (as shown)

    Step 4

    Start by frying garlic and red chili pepper in coconut oil until soft. Add the rest of the ingredients together with the coconut milk&stir. Let simmer for 15-20 minutes. Add fresh coriander.
