How to Make Healthier Stovetop Grapenut Pudding

A great chilled breakfast alternative or dessert.

Supplies

  • 1 ½ Cups Kashi's 7 whole grain Nuggets cereal
  • 1 ½ Cups Almond Milk
  • 4 Tablespoons Agave Nectar
  • 1 Teaspoon Agave Nectar
  • ½ Teaspoons Vanilla Extract
  • ¼ Teaspoons Himalayan Pink Salt
  • 1 Egg (Beaten)
  • ½ Cups Almond Milk (additional)
  • 3 ½ Ounces Raisins
  • 1 Tablespoon Coconut Oil
  • Cinnamon
  • Instructions

    Step 1

    Grab your cereal.

    Step 2

    Pour 1 1/2 cups into a sauce pan.

    Step 3

    Grab your almond milk.

    Step 4

    Pour 1 1/2 cups into the sauce pan.

    Step 5

    Stir everything up.

    Step 6

    Cover the pan but don't turn it on.

    Step 7

    Wait 15 minutes for the nuggets to absorb the milk.

    Step 8

    It should look like this and now we can get to cookin'.

    Step 9

    Add the additional 1/2 cup of almond milk.

    Step 10

    Get your agave nectar.

    Step 11

    Add 4 Tablespoons and 1 Teaspoon to the pan.

    Step 12

    Grab the vanilla extract.

    Step 13

    Add 1/2 Teaspoon.

    Step 14

    Get your Himalayan Pink Salt.

    Step 15

    Add 1/4 Teaspoon.

    Step 16

    Stir everything up.

    Step 17

    Turn on the heat to high.

    Step 18

    When the consistency looks like this...

    Grab your raisins.

    Step 20

    Add them to the pot and stir it up.

    Step 21

    Turn the heat down to low.

    Step 22

    At this point, crack your egg into a bowl.

    Step 23

    Beat it.

    Step 24

    Use some of the mixture in the pot to temper your egg. Add small amounts at a time while constantly stirring. If you're unsure what this means, Google or YouTube it.

    Step 25

    I don't have pictures of adding the egg because I only have two hands. ;). Add the egg slowly to the pot while stirring constantly and let it cook for a few more minutes while occasionally stirring.

    Step 26

    Turn off the heat and grab your coconut oil.

    Step 27

    Add a tablespoon to the mix.

    Step 28

    Stir it in.

    Step 29

    Grab your serving container. I like Martini glasses.

    Step 30

    Divvy up the mix into four equal portions.

    Step 31

    Clean up your portions using a clean, wet, rubber spatula.

    Grab your Cinnamon.

    Step 33

    Put a nice dusting on top of each serving.

    Step 34

    Here's the hardest part of the recipe. Pop these puppies into the fridge to chill and develop a nice crust on top. Wait at least 10-12 hours. So worth the wait though.
