Separate the cilantro leaves from their stems. Discard the stems because we only need the leaves
Place the coriander leaves in a cup or small bowl and finely cut them with scissors
Cut the onion into small squares
Mix the onion with cilantro and reserve
Cut each avocado in half
With the help of a spoon, remove the avocado pulps and put it, together with the seeds, in a large bowl
Without removing the seeds from the bowl, crush the avocado pulp with a fork. Avocado turns black quickly. The seeds will delay the oxidation process. You can also use the juice of half a lemon.
Add salt to taste
Add the onion and coriander mixture to the bowl. Using a wooden spoon or paddle mix the onion, cilantro and avocado
Enjoy it! If you're not going to eat it right away add the juice of half a lemon to prevent the guacamole from turning black.
