How to Make Ground Beef & Eggplant Masala (Sauté)

Beef and eggplant with Indian spices made the perfect combo! 👌

Supplies

  • 1 Pounds Ground beef (500g)
  • 1 Eggplant (large)
  • 1 Cup Onions (finely chopped)
  • 1 Tablespoon Garlic-ginger paste
  • 1 Cup Tomato (finely chopped)
  • ½ Cups Tomato puree
  • 1 Teaspoon Ground black pepper
  • ½ Teaspoons Turmeric powder
  • 1 Teaspoon Curry powder
  • Salt
  • ½ Cups Cilantro (chopped)
  • Optional spices:
  • ⅛ Teaspoons Ground cinnamon
  • 1 Teaspoon Coriander powder
  • ⅛ Teaspoons Ground cloves
  • 1 Bay leaf
  • 1 Teaspoon Chili powder
  • Instructions

    Step 1

    Cut your eggplant into 1/2 inch pieces..

    Step 2

    ..and sauté until done. You don't need to add any seasoning at this point. Set aside.

    Step 3

    Heat about 2 Tbsp oil in a pot, and add the onions. Cook until lightly browned.

    Step 4

    Add the garlic-ginger paste and spices, including the optional ones if using. I made my own garlic-ginger paste.

    Step 5

    Sauté for a few seconds to fry the spices, making them more flavorful. Add in the tomatoes.

    Step 6

    ..and the puree.

    Step 7

    Add about 1/2C water, cover and let cook until reduced.

    Step 8

    Mix in ground beef and about 1/2C water. Cover and let cook until beef is done. Stir occasionally to make sure it's not sticking to the bottom.

    Step 9

    When done, throw in the readied eggplant and cilantro.

    Step 10

    You could just add the eggplant to the curry without cooking first, but I think that sautéing first brought out the flavor better.

    Step 11

    Combine it all together. Sprinkle with leftover cilantro.

    Step 12

    This was super yummy! Serve with steamed/boiled rice or chapati or naan :)
