This unique twist on a grilled side dish will kick up just about any meal. It stays firm with a fun smoky flavor that is brought together by the spices and Sriracha mayonnaise.
Preheat grill to about 300 degrees or set to medium heat.
First we will make the slaw dressing. Mix 1 cup mayonnaise and 1/2 Cup apple cider vinegar. A wire whisk works nicely.
Add 1/2 tsp salt and fresh cracked pepper.
Add 1/2 teaspoon of caraway seeds and blend
Add approximately 4 Tblsp of Agave Syrup and 4 Tblsp of Sriracha and blend. Taste at this point to adjust the seasonings. Cover and place in refrigerator.
Remove the outer leaves of the red cabbage
It should look like this.
Cut the cabbage into quarters lengthwise and place on a platter along with the pineapple and onion.
Coat with olive oil on all sides. Snip the green part of the green onion to top the dish at the end.
Now you're ready to make your first grilled slaw.
It is important to leave the core intact so the cabbage doesn't fall apart when on the grill. Grill for about 10 minutes and allow just a little char.
Add the pineapple and green onion. Watch it closely as they only need a couple of minutes
We want firm cabbage leaves with just a hint of smoke. Let the ingredients cool slightly.
If the green onions are a bit hard, you can microwave them for about 25 seconds. The cabbage and green onions should be firm. Gently cut off any of the black char on the cabbge.
Get the slaw dressing ready.
Carefully remove the core from the cabbage keeping the quartered cabbage intact.
One serving is a quarter cabbage, a pineapple ring and one green onion.

You can present this dish like so and and use a simple lengthwise slice on the cabbage. Then drizzle the sriracha dressing. Let your guest have fun by mixing it themselves similar to a chopped salad.

Alternatively, you can do a rough chop on the cabbage, green onions and pineapple. Drizzle the slaw dressing and add the raw chopped green onion. Your friends and family will beg you to make it often.
