Add first three ingredients to a small bowl and let sit for 1 hour.
Be sure the bowl is big enough to allow for some expansion.
Potato water made by boiling a couple baking potatoes, needs to be luke warm.
Add the yeast mixture to the potato water and stir to combine.
Sift 12 cups of flour and salt together I large bowl...I probably should've used a bigger one. Pour the potato water over and mix with your hands.
Cover with a damp towel and let rise about 1 hour. Knead in the bowl and cover and let rise for another hour. I put a bowl of boiling water next to the bowl of dough and covered both with the towel.
Sprinkle some flour on the counter and dump the dough onto the floured surface. Knead and separate into four parts. Sprinkle flour in the bottom of 4 bread pans. Shape and place the dough in each pan
Bake at 375 degrees until the crust is golden, then turn down to 350 for a total of 45 minutes. Pull the bread out and let cool on a rack. Enjoy the beautiful smells filling your house!
