How to Make Gluten-Free Rice Flour Pancakes

These gluten-free pancakes, made of rice flour are easy to make, healthy & delicious. The best part is the batter can be made the night before. All you have to do in the morning is to just cook them.

Supplies

  • 3 eggs, separate egg whites from yolk
  • ½ Cups Milk
  • 1 Tablespoon vegetable oil
  • 1 Teaspoon vanilla extract
  • 1 Tablespoon honey
  • 1 Cup rice flour
  • ½ Teaspoons salt
  • ¼ Teaspoons baking powder
  • ¼ Teaspoons baking soda
  • Instructions

    Step 1

    To make the pancakes, we need to make the pancake batter first. So prepare all ingredients needed to make the pancake batter.

    Step 2

    Beat the egg whites till stiff.

    Step 3

    In a medium size bowl, add in all the dry ingredients, starting with rice flour, then salt, baking powder and baking soda. Mix the dry ingredients till well mixed.

    Step 4

    Then add the wet ingredients into the dry flour mixture starting with egg yolks followed by vanilla extract, milk and vegetable oil.

    Step 5

    Using a whisk, mix thoroughly the dry and the wet ingredients.

    Step 6

    Add in half the whisked egg whites and mix well.

    Step 7

    Fold in the remaining of the egg whites. Mix till no lumps remain.

    Step 8

    Cover the bowl with cling wrap and let stand at room temperature for 1 hour or in the refrigerator overnight.

    Step 9

    To cook the pancake, first lightly oil a non-stick pan over medium high heat.

    Step 10

    Pour 1/4 cup of batter onto the pan and cook until bubbles form and the edges are dry, about 1 to 2 minutes.

    Step 11

    Flip over and cook until browned on the other side, another 1 minute.

    Step 12

    Once it has cooked to perfection, remove from pan.

    Step 13

    Repeat the same with the remaining batter.

    Step 14

    Serve them warm with just some maple syrup and fresh fruits.
