How to Make Gluten-Free Banana Bread Muffins (Vegan Too!)

Supplies

  • 1 ½ Cups Steel cut oats
  • ¾ Teaspoons Baking powder
  • ½ Teaspoons Baking soda
  • ⅛ Teaspoons Salt
  • 1 ½ Mashed bananas
  • ⅙ Cups + 1/2 tablespoon Brown sugar
  • ½ Teaspoons Vanilla
  • ½ Tablespoons Coconut oil
  • Rest of oat flour
  • Instructions

    Step 1

    Preheat oven to 350

    Step 2

    Make oat flour by blending 1.5 cups of oats in a food processor until it creates a flour like consistency

    Step 3

    Add dry ingredients (baking soda, baking powder, salt, oat flour) in a bowl. Mix and set aside

    Step 4

    Add bananas, brown sugar, coconut oil, vanilla and rest of oat flour in a bowl

    Step 5

    Mix on low for 1-2 min until fully combined

    Step 6

    Add oat flour mix

    Step 7

    Mix on medium for 1-2 min until the batter is a smooth consistency

    Step 8

    Line a muffin tin

    Step 9

    Use a heaping spoonful of mix to fill each muffin tin

    I got 10 muffins out of the mix

    Bake for 20 min
