How to Make Ginger Sauce Steamed Fish

Steaming fish is never dull when it contains ginger. An aromatic in Asian cooking, ginger is incorporated into a spice paste in this ginger sauce steamed fish to build a deep, warm special flavour.

Supplies

  • 500 Grams fresh fish
  • 1 Bunch spring onion, line steaming plate
  • 1 Bunch spring onions, for garnish
  • 1 Bunch coriander leaves, for garnish
  • 1 red chili, for garnish
  • 100 Grams fresh ginger, grate/ground
  • 2 Tablespoons vegetable oil
  • ¼ Cups water
  • ½ Teaspoons salt
  • ¼ Teaspoons sugar
  • ½ Teaspoons oyster sauce
  • 1 Tablespoon cooking wine (optional)
  • ½ Teaspoons sesame oil
  • ¼ Teaspoons chicken stock granules
  • 1 Teaspoon cornstarch solution
  • 1 Tablespoon fried garlic & oil
  • Instructions

    Step 1

    Rinse fish with cold water, pat dry and make small slits on the fish.

    Step 2

    Line spring onion on steaming plate and top with the fish.

    Step 3

    Prepare to steam the fish by first boiling some water in steamer. Then add in the fish.

    Step 4

    Steam the fish over high heat for 10 to 15 minutes or until cooked. While fish is being steamed, prepare the ginger sauce.

    Step 5

    Grate or ground the fresh ginger.

    Step 6

    Prepare all ingredients needed to make the ginger sauce.

    Step 7

    Heat up oil in wok and add in the ground ginger. Then add in all the other ginger sauce ingredients and stir fry till well mixed.

    Step 8

    Add in water and cook until the ginger paste starts to boil.

    Step 9

    Then add in cornstarch solution. When the ginger paste has thickened, dish it up into a bowl and set aside.

    Step 10

    When fish is cooked, remove fish from steamer.

    Step 11

    Discard the liquid and spring onions from the steamed fish.

    Step 12

    Top the fish with the cooked ginger paste and sprinkle with fried garlic and garlic oil. Garnish with green coriander leaves, spring onion and red chili.

    Step 13
