How to Make Feta & Asparagus Potato Salad

Yet another way to serve new potatoes 😀

Supplies

  • 999 Grams New potatoes
  • 6 Asparagus stalks
  • 200 Grams Feta cheese
  • 100 Grams Chopped red onion
  • 1 Teaspoon Fresh thyme
  • Kalamata olives (a handful)
  • 50 Milliliters Olive oil
  • 2 Tablespoons White wine vinegar
  • ½ Teaspoons Salt
  • 1 Pinch Black pepper
  • Instructions

    Step 1

    Boil the new potatoes and cool for a while.

    Step 2

    Gently fry the asparagus.

    Step 3

    Finely chop the onion.

    Step 4

    Cut the boiled potatoes in quarters.

    Step 5

    Mix olive oil, white wine vinegar and salt.

    Step 6

    Add the potatoes.

    Step 7

    Also add the onion and mix.

    Step 8

    Add the asparagus.

    Step 9

    Add olives.

    Step 10

    Add the crumbled feta.

    Step 11

    Add fresh thyme.

    Step 12

    It's ready to serve!
