How to Make Feijoa Mousse

A good way to put good use to Feijoas!

    Step 1

    Ingredients:4 Ripe Feijoas, 150 ml cream, 50 g sugar, 1/4 pineapple juice, 2 tsp gelatine, 3 tsp lime juice, mint for decoration, electric beater, blender, 3 bowls. Remember to wash your hands!

    Step 2

    Firstly, whip the cream. Put this aside in another bowl.

    Step 3

    Then sprinkle 2 tsp of gelatine powder over 1/4 cup of pineapple juice in a fresh bowl. Leave gelatine to swell.

    Step 4

    Add three tsp of lime juice and 1/4 cup of sugar. Add more lime juice by the tsp if too sweet. Keep in mind that you will be adding the Feijoas later, which are quite sweet.

    Step 5

    Put the mixture in the fridge for an hour to let the mixture thicken. Keep a close eye on it so that it doesn't set.

    Step 6

    Cut in half and purée the Feijoas with skin. Don't cut your hand! When it is done it should look light green coloured with dark green specks. Put this aside in a separate bowl (not with the cream).

    Step 7

    Then beat the gelatinous mixture you made earlier until it turns frothy.

    Step 8

    Fold the Feijoa purée and whipped cream through the beaten mixture. Don't stir because it will make the cream lumpy. Don't over fold or else the same affect will occur as if you had mixed it!

    Step 9

    Put in serving bowls and leave to set. Ta-da! Delicious Feijoa mousse!

    Step 10

    Health and Safety: Wash your hands! Clean the area you are using to prepare your food. Be cautious when cutting. Dry your hands before you plug electrical equipment into electric socket.
