How to Make Eisbein Smoked Pork Knuckle

This is a great dish but not for the faint hatred

Supplies

  • Smoked pork knuckle
  • 1 Liter Fanta orange
  • 1 Teaspoon Coriander
  • 1 Tablespoon Pepper corns
  • 1 Star anise pod
  • 3 Bay leaves
  • 1 Teaspoon Pickling spice
  • 3 Tablespoons Brown sugar
  • Water
  • Instructions

    Step 1

    One small pork knuckle per person or a big one can be shared

    Step 2

    Get a big pot and and add water

    Step 3

    Get some fanta of you cant find this brand use any orange flavour

    Step 4

    Coriander

    Step 5

    Pepper corns

    Step 6

    Star anise

    Step 7

    Pickle spice if you can find this look for some Juniper berries

    Step 8

    Brown sugar

    Step 9

    And finally some bay leafs mix it all together

    Step 10

    Add the knuckle make sure it is covered with the Liquid at all times

    Step 11

    Bring to the boil and the let simmer for a few hours i let mine go for 4.5 hours

    After its done take it out and let it cool

    Dry with some paper towels

    Step 14

    Score the skin with a sharp knife be sure not to cut in to the meat

    Step 15

    Get some butter

    Step 16

    Honey

    Step 17

    Brown sugar

    Step 18

    Mix it all together

    Step 19

    Brush on to the meat

    Step 20

    After 15 min at 220°c remove from the oven

    Step 21

    Brush with the mixture again

    Step 22

    This needs mustard

    Step 23

    Get e few divert one

    Step 24

    When everything is nice and crispy 45-60 mins Your ready to enjoy

    Step 25

    Serve with some sauerkraut and potatoes in butter and parsley and enjoy!!!
