Pic of all the ingredients. I use the crescent rolls as a crust( it tastes good and easier than making a dough crust)
Slice bacon into 1" slices and cook until crispy. Place aside for later.
Separate the eggs into two bowls.
Grate cheese while bacon is cooking.
Open rolls and put into greased muffin tins. I rolled out dough and used a mason jar lid( wide-mouth) to form circles to put in tins. Also I greased the tins with bacon fat.
Add the sour cream to the egg yolks. Mix well, then add the flour, stir until smooth.
Whip up the egg whites until fluffy.
Fold the whipped eggs into the egg/sour cream mixture. Fold until mixed.

Now place some bacon into each tin. I would add a small spoon of egg to each tin. If using a pie plate then line the bottom with bacon and don't add any egg mix yet.
Place some tomatoes into each of the tins. 1 layer is all that is needed. If using a pie plate add the tomatoes on top of the bacon
Add the cheese then drizzle the egg mix into each tin, hoping it doesn't overflow too much. Tapping the trays helps settle the mix down so you can use the rest of the mix.
It might look a bit messy but don't worry. If using pie plate then add cheese. Then pour the egg mix over top. Hoping it doesn't overflow.
Bake for about 25-30 min at 350*F
When done take out of oven and carefully take them out of the tins.
If you can deal with the heat EAT THEM ALL!!
With the rest of them you can wrap them up, put them in the fridge and save for later. I hope you enjoy!!
