How to Make Easy and Yummy Lemon Squares

This is a quick & simple recipe adapted from David Lebovit's whole lemon bars.Original recipe called for organic lemons and the whole lemon was used.I didn't include the skin since I used non-organic


  • 1 Cup Flour 140g
  • ¼ Cups Sugar 50 g
  • ¼ Teaspoons Salt
  • 8 Tablespoons Melted butter 115g or 1 stick
  • ½ Teaspoons Vanilla extract
  • For the filling
  • 3 Pcs lemon 150g more or less
  • 1 Cup Sugar 200 g
  • 3 Tablespoons Freshly squeezed lemon juice
  • 3 Large eggs plus 1 yolk
  • 4 Teaspoons Cornstarch
  • ¼ Teaspoons Salt
  • 3 Tablespoons Melted unsalted butter 45g
  • Instructions

    Step 1

    Preheat oven to 350F Overturn an 8 inch square pan (I used 9) on the counter and wrap the outside snugly with foil.shiny side up.remove foil.turn pan over and fit the foil into the pan. Smooth.

    Step 2

    Mix all the dry ingredients of the crust(flour, sugar,salt) . Then add in the melted butter.

    Step 3

    Add vanilla and stir until smooth.

    Step 4

    Smooth the batter into the bottom of the pan, using an offset spatula, or use wax paper to cover the batter, then Use your hands to press down til smooth.Bake for25 mins or until golden brown.

    Step 5

    While the crust is cooking, zest lemons.peel skin off .cut in halves and seed.original recipe used 1 large organic lemon, skin included.Do not attempt to use non organic whole lemons with skin.

    Step 6

    Put the chunks of lemon,zest , 3Tbs lemon juice and sugar into a food processor or blender til the lemon pulp is completely broken up.(if you have sour lemons,omit the addl 3tbsps of lemon juice.)

    Step 7

    Add the 3eggs and 1yolk ,cornstarch and salt, and butter. Blend til may omit the yolk for a drier less gooey filling. I might do that next time.

    Step 8

    When crust comes out of the oven,reduce heat to 300F.Pour the lemon filling over the hot crust and bake for 25 mins or until barely set.

    Step 9

    Let cool completely. Remove foil then cut into squares or rectangles.

    Sift powdered sugar over the top just befre serving.

    Here you have these yummy lemon can keep the bars in an airtight container at room temp up to 3 days or freeze up to a month. Im sure it will be gone before the 2nd day :)
