How to Make Donut Muffins

Supplies

  • 187g all purpose flour
  • 1/8 tsp baking soda
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 110g fresh milk
  • 1 tbsp plain low fat yoghurt
  • 60g unsalted butter
  • 60g fine sugar
  • 1 large egg
  • 100g unsalted butter, melted
  • 1/2 cup sugar mixed with 2 tbsp ground cinnamon
  • Instructions

    Step 1

    Preheat oven to 180c. Cream butter for about 3 min on medium speed

    Step 2

    Add sugar

    Step 3

    Add egg and beat until combined

    Step 4

    Add 1/3 of flour. Then 1/3 milk-yogurt mixture

    Step 5

    Alternate between dry and wet ingredients until well mixed

    Step 6

    Scoop into mini muffin trays

    Step 7

    Bake for about 20 mins at 180c until the top is firm and brown. Leave it to cool

    Step 8

    Melt the butter. Coat each muffin with butter

    Step 9

    Followed by the sugar-cinnamon mixture

    Step 10

    Viola!!! Mini donut muffin!!
