  • Instructions

    Step 1

Start the onion dice like a blooming onion...

    Step 2

    Dice onion, celery & garlic.

    Step 3

Cube chuck (or in this case grass-fed brisket)

    Step 4

Toss in flour to coat. Shake off excess.

    Step 5

Add butter to large pot on medium to medium-high heat.

    Step 6

Add chuck to pot, sauté on medium high heat until outsides are browned.

    Step 7

Reduce heat to medium. Add ground beef, pulling apart but not making it too granular or minced.

    Step 8

Once all meat is lightly browned, move to the perimeter of the pot. Add onions, celery & garlic to the middle. Stir frequently.

    Step 9

Add 2-3 diced peperoncini and 1/2 cup of the juice from jar.

    Step 10

Take a sip of your favorite stout...

    Step 11

... and now pour 6 ounces into the pot. We gave our chili a heart of darkness.

    Step 12

Add stewed tomatoes and juice. I like to cut the larger ones in half.

    Step 13

    Add V8.

    Step 14

    Add cayenne hot sauce.

    Step 15

    Add 2 tbsp BBQ sauce

    Step 16

Add chili powder. I usually use hot chili powder, but ancho was what we had.

    Step 17

Add chipotle and cayenne pepper to your liking, usually a pinch or two each.

    Step 18

    Add vinegar & ketchup.

    Step 19

Add 1 packet of onion soup mix.

    Step 20

Add cumin, oregano, basil, thyme, salt & black pepper.

    Step 21

    Add 1 tsp beef bullion.

    Step 22

    Add pinch of sugar.

    Step 23

Let simmer, stirring occasionally for 2-3 hours.

    Step 24

Divide into containers for storage in fridge and/or freezer.

    Step 25

    Optional: serve over gemeli pasta...

    Step 26

    Optional: top w/ shredded cheese...

    Step 27

Place under broiler for 2-3 minutes to melt & brown the cheese. Optional: serve w/ dollop of sour cream & chives.
