Preheat oven to 425°F.
Prepare a pie crust or as I'm doing here, use a frozen one.
Bake for 15 minutes until golden brown.
While the pie crust is baking, let's prep the ingredients - first, slice the mushrooms.
Melt the butter in a skillet and sauté the mushrooms.
Grate the Swiss cheese...
Our pie crust is done so remove it from the oven.
Sprinkle pie crust with 1/4 of the cheese.
Now we'll prep the spinach - I'm using frozen spinach so I'm defrosting it under running water in a colander.
But now we need to get all the water out! Press out that water using your hand or . . .
. . . press the spinach with a glass. Press and press and get that water out!
Then spread the spinach over the layer of cheese followed by the mushrooms.
Then layer the rest of the cheese on top.
In a bowl, mix the eggs, cream and milk with a whisk.
Add the salt, pepper and nutmeg.
Mix it good. Real good. Then. . .
. . . carefully pour the milk/cream mixture over the pie.
It will look like this!
Put in the oven and bake for 40 minutes until puffy and golden.
