How to Make Delicious + Healthy Chocolate Cake

This cake is delicious and has a brownie like texture if made with almond flour; whole wheat flour makes it more cake-like. It's a treat with no guilt and a fun way to introduce more fruit and veggies to food.


  • 1 Cup Almond Flour
  • 2 Cups Zucchini (peeled/grated)
  • 2 Eggs
  • ¼ Cups Honey (up to 1/2 cup)
  • 1 Cup Dates (soaked in water for 15 minutes)
  • 1 Tablespoon Vanilla
  • 1 ½ Teaspoons Baking soda
  • ¼ Teaspoons Salt
  • ½ Cups Cacao powder
  • 1 Granny smith apple (makes about 1/4 cup of sauce)
  • Instructions

    Step 1

    Gather ingredients. You can substitute whole wheat flour for a much drier cake. Grate the zucchini, chop the dates, make your own applesauce from 1 granny smith apple (peeled, boiled and blended).

    Step 2

    If putting zucchini in cake makes you nervous you can lower the amount to 1 cup; not packed. ___________________________ For the chopped dates we used a small food processor.

    Step 3

    Mix all of the dry ingredients together. {Flour, cacao powder, baking soda and salt}

    Step 4

    Peel and chop the granny smith apple. Add it to boiling water for a few minutes. Once softened, put it in the food processor or blended to make applesauce.

    Step 5

    Mix all of the wet ingredients together. {Eggs, applesauce, vanilla and honey}

    Step 6

    Combine the wet and dry ingredient mixtures. It should look similar to this if you used almond flour. Whole wheat will make a smoother consistency.

    Step 7

    *save a tablespoon of dates. Stir in the grated zucchini and the remaining chopped dates.

    Step 8

    They will stick together. You'll need to separate and top the cake with some of these. You can also add a chopped nut topping of your choice.

    Step 9

    Pour the mixture into an 8x8 or 9x9 pan; we prefer glass. Coat the pan with non stick oil. Cook at 350 degrees for 30 minutes. Insert toothpick; should come out non-gooey.

    Very moist, very textured, very delicious cake!

    This is the whole wheat flour version topped with walnuts. A side of fried banana.

    Step 12

    Fried Banana Side - 1 banana sliced, 1/2 tsp coconut oil in a frying pan. Cook for a few minutes. Mix together 1 tbsp water & 1 tbsp honey and pour over banana. Top with cinnamon.
