Just like our other recipe for French Potatoes, 4 simple ingredients is all you need! Only difference in recipes is the seasoning blend. We make 9 blends so you can make these 9 different ways!
Peel, halve and cube potatoes. Keep uniform - they will cook evenly. 1" cubes is a good target size.
Add to pot then fill with COLD water, just enough to cover the potatoes. Add 1 tablespoon #2 Curry in a Hurry to water. This helps flavor the potatoes while cooking.
Set your timer for 22 minutes. Should be just enough time to bring pot to boil and cook potatoes. Check for tenderness of potatoes around 20 mins. Cook longer if you like softer potatoes.
Strain potatoes then place in bowl to cool a bit. Add remaining 3/4 teaspoons #2 Curry in a Hurry, olive oil and parsley.
