How to Make Cucumber Garlic Pasta Sauce

Supplies

  • 1 Big ass cucumber, seeded and diced
  • 1 Red pepper, diced
  • 1 Medium onion, diced
  • 1 Pint Half and half
  • ½ Tablespoons Tarragon
  • Sea salt to taste
  • Pepper to taste
  • Red pepper flakes (optional)
  • 1 Tablespoon EVOO
  • Instructions

    Step 1

    These are all the seasonings I used.

    Step 2

    Start by bringing a pot of water to boil for the spaghetti.

    While the water comes to a boil, dice up your cucs, onion, garlic,

    and a red pepper. 😊

    Step 5

    In another pot, heat up the EVOO on medium heat. My EVOO has garlic, but you can use whatever you'd like.

    Step 6

    When the EVOO is hot, add in the onion and cook for about three minutes.

    Step 7

    Next, add in the garlic and cook for another three minutes.

    Step 8

    Next add in the red pepper, seasoning, salt and pepper and cook for another two minutes.

    Step 9

    Add in the pint of half and half. You can also add in a pint of almond or coconut milk. I used almond milk my first time making this and it was awesome as well.

    Step 10

    Stir everything together and bring to a boil.

    Step 11

    Meanwhile, your pot of water should be boiling.

    Step 12

    Add in your spaghetti or whatever pasta you enjoy.

    Step 13

    Whisk your sauce for a couple seconds after it starts to boil, then

    add in your cucs.

    Step 15

    and bring back up to a boil. Then reduce the heat to a simmer for about three minutes, then remove from heat and allow to cool. Keep an eye on the spaghetti noodles.

    Step 16

    When your spaghetti noodles are al dente (or however you like them) drain and toss some on a plate.

    Top the noodles with the sauce and tell me how amazed you are at how good this is. 😎
