How to Make CrockPot Chicken Tortilla Soup (Clean Eating)

Supplies

  • 1 Rotisserie Chicken
  • 14.50 Ounces Canned Diced Tomato (no salt added)
  • 14.50 Ounces Canned Diced Tomato w/ green chilies
  • 2 Cans Black Beans
  • 1 Pkg Frozen corn kernel
  • 1 Teaspoon Onion powder
  • 1 Teaspoon Chili powder
  • Sea Salt & Black Pepper
  • 2 Garlic cloves
  • 1 Juice of Lime
  • 4 Cups Chicken broth (low sodium)
  • Instructions

    Step 1

    Gather your supplies!

    Step 2

    Add 4 cups chicken broth to crockpot, then the juice of 1 fresh lime.

    Step 3

    Now add 1 bag (16 oz) frozen corn to the pot.

    Step 4

    Press 2 garlic cloves directly into the pot. (Mmmmm Garlic, heart healthy)

    Step 5

    The shredded chicken from 1 rotisserie chicken (or 2-3 chicken breast cooked & shredded)

    Step 6

    Your canned goods, open & add to the pot.

    Step 7

    Don't forget to rinse & drain the canned black beans with cold water first....

    Step 8

    Pinch of S&P to taste

    Step 9

    1 tsp Onion Powder "Bam"

    Step 10

    1 Tsp chili powder "Feel the Heat"

    Step 11

    You can cook High 4-6 hrs or Low 6-8 hrs. Enjoy!

    Step 12

    Mix & ready to slow cook all day. Be sure to place cover on top.
