How to Make Creamy Skillet Mac and Cheese

Supplies

  • 3 ½ Cups Water
  • 1 ½ Cups Evaporated milk, divided
  • 3 Cups Macaroni
  • 1 Teaspoon Cornstarch
  • ½ Teaspoons Dry mustard
  • ¼ Teaspoons Hot sauce
  • 1 ½ Cups Cheddar cheese, shredded
  • 1 ½ Cups Monterey Jack cheese, shredded
  • Salt and pepper
  • Bacon, cooked (optional)
  • 2 Tablespoons Butter, cut into small chunks
  • Instructions

    Step 1

    Add 3 1/2 cups of water to 12" skillet. Pour in 1 cup evaporated milk.

    Step 2

    Add macaroni. Bring to a boil over high heat then simmer for 10 minutes stirring often.

    Step 3

    It will look like this, but keep stirring.

    Step 4

    As it simmers, the liquid starts to evaporate. It's very important to keep stirring so the pasta doesn't stick to the pan.

    Step 5

    Keep stirring!

    Step 6

    In a separate bowl, add cornstarch.

    Step 7

    Pour in 1/2 cup evaporated milk.

    Step 8

    Add dry mustard.

    Step 9

    Add hot sauce

    Step 10

    Whisk well.

    Step 11

    Pour into pasta mixture and simmer for 1 minute until sauce is thickened.

    Like this.

    Cut butter.

    Step 14

    Pour pasta in a large serving bowl. Add cheese, one handful at a time. Stir to blend.

    Step 15

    If it feels too sticky, you can add a little bit of water to make the consistency how you like it.

    Step 16

    Add butter, salt and pepper. Stir well.

    Step 17

    Sprinkle with cooked bacon (Optional). Serve and enjoy!
