How to Make Creamy Parsley and Scallion Spring Dressing

Supplies

  • Juice of one lemon
  • 2 tbs of mayo
  • 1 cup of plain soy almond or coconut yogurt
  • 1 bunch of Curley leaf parsley de stemed
  • 1-2 cloves of garlic
  • 2 large scallions cut in 1/4 s
  • Salt and pepper
  • 1 cup or more of good olive oil only

    Chop all the greens

    Step 3

    Then add the yogurt, mayo, salt, pepper and lemon juice

    Step 4

    Slowly pour the olive oil in while the machine is running. This is the correct consistency.
