Start with fresh jalapeños.
Cut off the top with the stem and slice them lengthwise.
Cut out the seeds and other white membrane. This will create a nice cavity for the cream cheese.
Fill each half with cream cheese.
Slice your bacon into thirds.
Wrap bacon around jalapeños and secure with a toothpick.
Place jalapeños on a grated sheet so the bacon fat can escape. Bake at 375 for 20-25 minutes.
