preheat oven to 160c.
melt butter and let it cool.
mix butter and sugar.
add plain flour salt and half a table spoon of vanilla essence.
mix till it's like a biscuit dough.
pour into the middle of a spring form tin 22cm diameter
press in pastry using fingertips.
bake in the oven for 15 minutes or until dough is a light honey brown. Then cool to room temperature.
for cream-cheese and strawberry filling, process cream cheese, sour cream and half a teaspoon of vanilla in a food processor until light and smooth.
spread mixture over the base of the cooled tart
melt the strawberry jam in a small saucepan over low heat.
remember to have it on low heat
pour the jam over the strawberries and mix.
pour strawberry mixture on top of the tart
refrigerate for at least 1 hour before serving
optional: you can serve with extra strawberries and ice-cream
