How to Make Corn Spoon Bread in the Alto-Shaam 4.10 Combi

These can be baked off ala cart because of the speed of the Alto-Shaam Combi oven.

Supplies

  • 10 Ounces Corn, charred and cut off cob
  • 2 Tablespoons Stone ground corn meal
  • 2 Tablespoons Unbleached white flour
  • 2 Tablespoons Sugar
  • ¼ Teaspoons Baking powder
  • Salt & pepper to taste
  • 2 Tablespoons Extra virgin olive oil
  • 3 Eggs, lightly beaten
  • 1 Cup Bechamel
  • 1 Cup Smoked Colby jack cheese
  • 2 Jalapenos
  • ½ Cups Cilantro chopped
  • 6 Green onions
  • Paprika for garnish
  • Optional: pork belly, chorizo, shrimp
  • Instructions

    Step 1

    Smoke the cheese in your smoker combi. Smoke for 10 minutes and leave in the oven with the door closed for an additional 30 minutes

    Step 2

    Combine dry ingredients. Mix eggs into bechamel

    Step 3

    Mix together everything but the eggs and bechamel

    Step 4

    Pour in bechamel mixture

    Step 5

    Put into a pint jar and dust with paprika

    Step 6

    Bake in combi mode at 450F (232C) with 70% steam for 13 minutes.
