Ok, confit orange, let's go!
Peel oranges and keep oranges for juice or segments
Finely slice orange peel
Place into a pan
Cover with cold water and bring to the boil.
Boil and take off straight away
Put back into pan and start again
Do this two more times
The reason we bring the peel up to boil from cold water 3 times is to take away the bitterness from the peel
Scale 300g caster sugar
And 300ml of water
Heat till sugar is dissolved
Add orange peel and simmer for 25-35 minutes
And there you have it folks, Confit Orange. Place into a jam jar, keep in fridge and use on top off your desserts
It's a pretty easy recipe to remember. 3 Oranges 3 times blanch 300g sugar 300ml water 30 minutes simmer, +- Great with chocolate:)
