How to Make Christmas Season Baking 'Pain D'epices'

'Pain d'epices' translates spice bread. Popular around Christmas season. It is similar to the gingerbread. It is a bread to accompany the foie gras and blue cheeses. Also.. used in different recipes

Supplies

  • 125 Grams Butter
  • 250 Grams Honey
  • 75 Grams Coconut sugar
  • 215 Grams Whole wheat flour
  • ½ Teaspoons Salt
  • 1 Teaspoon Baking powder
  • 2 Centimeters Ginger grated
  • 1 Orange zest
  • 10 Peppercorns + 1 Tsp turmeric
  • 1 Tablespoon Anise seed or 2 star anis
  • ⅛ Teaspoons Nutmeg
  • 10 Cardamon pods
  • 5 Cloves
  • 1 Tablespoon Cinnamon
  • 2 Eggs
  • 130 Grams Ground Almond and noisette 65g each
  • Instructions

    Step 1

    Prepare the mould with butter and flour. 19x7 cm

    Step 2

    The ingredients: flour, butter, sugar, honey and eggs

    Grind the spices

    Step 4

    Melt the butter with the honey and sugar.

    Step 5

    Grate the orange and the ginger over the butter mix. When the sugar is melted... Put them aside to cool down

    Add the butter mixture to the dry ingredients: (flour, salt and baking powder and the spices)

    Step 7

    Beat the eggs with a fork. Add over the batter. Then add the almond and the hazelnut flours (optional). Put in the mould. Bake 55 mins in a preheated oven 170C
