How to Make Choucroute in a Cook & Hold Oven

Slow braised choucroute in the Alto-Shaam Cook & Hold oven

Supplies

  • Pork butt or country ribs
  • Pork sausage
  • Onions
  • Garlic
  • Sauerkraut
  • Lager beer
  • Bay leaves
  • Thyme
  • Stock
  • Salt & pepper
  • Peeled apples
  • Instructions

    Step 1

    Sear the pork

    Step 2

    Develop a nice golden color and remove

    Step 3

    Brown sausages and remove

    Step 4

    Shred apples

    Step 5

    Sauté onions and garlic

    Step 6

    Add herbs and season

    Step 7

    Add beer

    Step 8

    Add stock

    Step 9

    Put meat back into roasting pan and bring to a simmer

    Step 10

    Place into a heated Cook & Hold oven. Cook at 250F (121C) for 3 hours and hold at 160F (71C) for up to 6 hours.
