How to Make Chocolate Chip Brownie Swirl Cookies AKA Brookies

Half cookie, half brownie, completely awesome.


  • 1 ¼ Cups all-purpose flour
  • ½ Teaspoons baking soda
  • ¼ Teaspoons flaky sea salt
  • 7 Tablespoons unsalted butter, at room temperature
  • ½ Cups packed dark brown sugar
  • ¼ Cups granulated sugar
  • 1 Teaspoon vanilla
  • 1 large egg
  • ¾ Cups semi-sweet chocolate chips
  • 6 Tablespoons unsalted butter, melted
  • ½ Cups semi-sweet chocoalte chips, melted
  • 1 Cup all-purpose flour
  • 2 Tablespoons unsweetened cocoa powder
  • ½ Teaspoons baking soda
  • ¼ Teaspoons salt
  • ½ Cups packed dark brown sugar
  • ¼ Cups granulated sugar
  • 1 Teaspoon pure vanilla extract
  • 1 large egg
  • 1 egg yolk
  • ¾ Cups milk chocolate chips
  • Instructions

    Step 1

    Celebrate the beginning of fall AKA baking season with these delicious brookies! These hybrid cookies are just as good as they sound!

    Step 2

    Gather your ingredients.

    Step 3

    Add 1 1/4 cups of flour into a large bowl.

    Step 4

    Add 1/2 teaspoon of baking soda.

    Step 5

    And 1/4 teaspoon of sea salt. Whisk ingredients together.

    In a large bowl, beat 7 tablespoons of room temperature butter using an electric mixer. Add in 1/2 cup of brown sugar.

    And then some more sugar.

    Step 8

    And a teaspoon of vanilla extract.

    Add in one large egg.

    Beat all the ingredients together at medium-speed until fluffy. This should take about 2 minutes.

    Now, gently fold in 1 1/4 cups of flour.

    Then fold in 3/4 cup of semi-sweet chocolate chips. Cover your cookie dough with plastic and place in the fridge for 45 minutes.

    Now the brownie! Mix together your melted butter and semi-sweet chocolate chips over medium heat. Stir until the mixture is completely melted, then remove from heat and whisk until smooth. Set aside.

    In a medium bowl, whisk together flour.

    Cocoa powder.

    Step 16

    Baking soda.

    Step 17

    And salt! Once mixed together, set aside as well.

    Now bring back your chocolate mixture and add in 1/2 cup of brown sugar.

    Then your granulated sugar.

    Step 20

    And a teaspoon of vanilla extract.

    Add in the egg + egg yolk. Whisk the wet ingredients together until well combined. This should take about two minutes.

    Now it's time to combine your wet and dry ingredients. Fold in your flour mixture with a rubber spatula. Stir until all the flour disappears.

    Last but not least, add your milk chocolate chips and preheat your oven to 350 degrees.

    Now it's time to assemble! Using an ice cream scooper, scoop two tablespoons of cookie dough onto baking sheets that have been lined with parchment paper.

    Join the two doughs together and make sure to get rid of any gaps.

    Place the baking sheets in the preheated oven and bake for 12 minutes. Remove once the edges look set but the centers still look slightly underdone. Let the cookies cool for 10 minutes.
