Let 3 cups of chicken soak up 1 cup of salsa verde over night
Shred some chihuahua cheese. You can buy preshredded but I find it cheaper and much tastier to buy a block and shred it yourself. One block made 3 cups.
Knowing my love of cheese we'll be using this and then some
Add approximately 1 1/2 cups to the chicken salsa mix. And mix thoroughly
Microwave for two minutes to heat through chicken.
Spoon chicken mix into small flour tortillas
I ran out of room in the other dish
Pour salsa and sprinkle Monterey Jack over enchiladas to taste.
I added the rest of the chihuahua cheese. Bake at 450 for 8-12 minutes. Or until cheese is nicely browned. Don't worry about undercooking since nothing here is raw.
These are super yummy and super easy to make!
