Rough chop onion, carrots, and celery.
Use a carcass from a previous meal. Maybe the one from beer can chicken?
Add veggies and chicken to a large pot and add enough water to cover.
Add salt, pepper, and herbs. Put on stove and bring to a boil. Reduce to a simmer and stir occasionally for at least an hour, longer will add more flavor.
After at least an hour strain out chicken, bones, herbs and veggies.
Make sure to get it all.
