boil the water
Grind the coffee, preferably with a conical burr grinder.
Add the filter to the Chemex with the three ply side in the spout. When the water is hot but before the boil, pour some into the filter to get rid of the paper taste, and heat up the pot.
Add the coffee. The ratio is 7.2g of ground coffee to 4oz of water. remove the filter and dump the warming water.
Add a small amount of water to "bloom" the coffee. It should be a small amount and very little if any water should reach the bottom.
After about a minute pour water slowly and evenly around the grounds.
It should take 2-3 minutes for all the liquid to filter through.
