How to Make Cheesy Enchiladas

Supplies

  • 1 Pounds Ground beef
  • 2 Teaspoons Taco seasoning
  • ½ Onion, chopped
  • 2 Cups Cheddar cheese, shredded
  • 1 Package burrito wraps
  • 2 Cans cream of chicken soup
  • 8 Ounces Sour cream
  • 1 Can Rotel tomatoes
  • ⅔ Cups Water
  • Cooking spray
  • Instructions

    Step 1

    Preheat oven to 350 degrees F.

    Step 2

    Chop onions. Set aside.

    Step 3

    Brown ground beef and drain grease.

    Step 4

    Add 2 tsp. taco seasoning to ground beef. You can either buy this in a packet or make it on your own (see my Homemade Taco Seasoning Snapguide!)

    Step 5

    Add water. Stir until liquid boils.

    Step 6

    In a separate saucepan, mix the 2 soups, sour cream, and Rotel tomatoes.

    Step 7

    Heat until boiling, stirring often.

    Step 8

    Spray a large baking dish with cooking spray.

    Step 9

    Stack burrito wraps in a flat pile. Add a scoop of meat, cheese, and onion.

    Step 10

    Begin rolling up one time.

    Step 11

    Roll both sides in.

    Step 12

    Fold over and roll the rest of the way.

    Step 13

    Now you have a basic enchilada! Place in baking dish.

    Step 14

    Repeat the process until you have a pan full of enchiladas.

    Step 15

    Pour heated sauce over enchiladas. Place in oven until sauce is bubbly.

    Step 16

    Remove from oven and sprinkle with cheddar cheese. Place back in the oven and bake until cheese melts.

    Step 17

    When cheese is melted, remove from oven.

    Step 18

    Serve and enjoy!
