Peel and remove ends
Slice very thin using a mandolin.
Lay out on sheet pans lined with Silpats or parchment paper.
Place into your Alto-Shaam CT PROformance combi oven.
Select professional mode.
Press the "dehydrate" icon and change the temperature to 186F (85C). Press the start button.
After about 2 1/2 hours the carrots should look like this and be crunchy.
Place into a Vitaprep and grind on high speed until the carrots are a fine powder.
Run through a fine mesh sieve and you have carrot powder!
