How to Make Carne Mechada (Beef: Eye Round)

This is a Puerto Rican recipe which has a very deep mix of flavors without taking away from the beefy stew like essence. Very easy to make friends will love trying something new. See PR Rice recipe.


  • 4 Pounds Eye round beef
  • ⅓ Red Pepper
  • ⅓ Green Pepper
  • 1 Bunch Cilantro leaves
  • ½ Teaspoons Finely diced garlic
  • 1 Teaspoon Adobo powder
  • 1 Tablespoon Sazon powder
  • ½ Teaspoons Oregano
  • 1 Teaspoon Black pepper
  • ⅛ Teaspoons Rosemary
  • ⅛ Teaspoons Thyme
  • ½ Onion
  • ½ Cups Dice ham (small)
  • ½ Cups Olive oil
  • 10 Olives
  • Will need the same amount of veggies and spices
  • For sofrito
  • Instructions

    Step 1

    These ingredients plus the spices is what will be needed for the marinading.

    Step 2

    Add the olive oil and all the spices into a bowl.

    Step 3

    Place all the ingredients into a large bowl and pour the marinade in. Stir together.

    Step 4

    Take your cut of neef and cut cross holes from one side to the back side without going through.

    Step 5

    Using spoon and finger fill in holes with ingredients. I used a stuffing injector. Fill in all the way. Take remaining marinade and place all over the meat. Let sit for at least 1 hour or over night.

    Step 6

    Next day. It will look like this. I rotated it after 4 hours on one side.

    Step 7

    Cut the same ingredients for the sofrito. ( sofrito is the basis of the majority of PR dishes, it is the flavoring of the dish withall the veggies and spices)

    Step 8

    Place a little bit of olive oil in a iron pot, let it heat on med. heat. Place beef cuts in and sear all the sides for 1-2 mins.

    Step 9

    Remove pieces to the side.

    Step 10

    In the same pot add all the ingredients again with the remainder oil. If needed add more you need 1/2 a cup in the pot. Stir and cook for 7-10 mins.

    Step 11

    Add salt. Stir 1-2 mins. On high.

    Step 12

    Add 1 small 4oz can of tomato sauce. Stir.

    Step 13

    Add boiling water stir so ingredients mix in. Place meat inside pot. How much water depends on your pot and size of beef. You want it to be at least this high on beef or covering them.

    Step 14

    After 3 hours on medium heat, remove and slice into 1 inch circular slices, place back in pot and cook for another hour or longer if needed. The meat should be very tender! Let sit for 20 mins. Enjoy.
